Feta Cheese Spread (Tyrosalata)

This recipe comes from Papagus Greek Taverna in Chicago's River North neighborhood. If you like feta cheese, this is very easy and yummy.

Feta Cheese Spread (Tyrosalata)

Ingredients:
1 pound imported feta cheese
1 3 oz. package cream cheese, softened
1 Tbsp. half and half
1 Tbsp. lemon juice
1 tsp. white pepper
3 Tbsp. olive oil

*Break up feta into a mixing bowl. Add cream cheese; beat to mix thoroughly. Add half and half, lemon juice, and pepper. Beat to mix thoroughly.

*Pour oil into cheese mixture in a thin stream, beating constantly. Taste and adjust seasonings as desired. Transfer to a bowl or deep plate. Great with pita triangles, Greek sesame bread, or crackers.

Let me know how you like it! I have tried to spread feta cheese on crackers before but it isn't easy, and this is very spreadable and seasoned nicely.
